easy bruschetta

I absolutely love bruschetta. It’s one of my favorite parts of an Italian meal. I have a weird relationship with tomatoes. I don’t like them unless they are in the form of bruschetta (or as a sauce). I decided to whip up a version of bruschetta to bring to a dinner party last week, and when I say ‘easy bruschetta’ I do mean it’s the easiest (and quickest) thing you can make, and it still looks just as gourmet as it does if you were to get it out at a restaurant.

Ingredients:

Italian bread, sliced

Tomatoes, cut up into as small of pieces as you’d like

Shredded mozzarella cheese

Parsley (or basil)

Olive oil

Salt, Pepper, Good Seasons Italian dressing mix

Directions:

1. Slice bread and place onto non stick baking sheet

2. Drizzle olive oil on top of bread

3. Bake in oven (350 degrees) for a few minutes, flip bread and bake for another few minutes

4. Place cut up tomatoes on top of bread, along with shredded cheese, and a little more olive oil, salt, pepper

5. Bake in oven for another 5-8 minutes or until cheese is melted to your liking

6. Sprinkle Good Seasons Italian dressing mix on top, finish off with parsley

the simple things in life

I love when I find pleasure in the simplest of things, such as the most beautiful red tomatoes, or celebrating for no particular reason. I think it’s these little moments that make our crazy lives even that much better. This weekend was hectic, but a few ‘simpler’ moments stood out in my mind.
